Biryani Recipe
Ingredients:
- 2 cups basmati rice (soaked for 30 minutes)
- 1 cup mixed vegetables (carrots, beans, peas, potatoes – chopped)
- 2 tbsp oil or ghee
- 1 large onion (thinly sliced)
- 2 medium tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 2 tsp Biryani Masala
- 1 bay leaf
- 1 cup yogurt
- ½ cup fresh coriander and mint leaves (chopped)
- Salt to taste
- 2.5 cups water or stock
- Saffron strands soaked in warm milk (optional)
Instructions:
1️⃣ Heat oil/ghee in a pan, sauté onions until golden brown. Add ginger-garlic paste and cook for a minute.
2️⃣ Add tomato puree, salt, and Biryani Masala, cook until the oil separates.
3️⃣ Mix in vegetables, yogurt, and half of the coriander-mint leaves. Stir well.
4️⃣ Add soaked rice and water, cover, and cook on low heat for 15-20 minutes.
5️⃣ Drizzle with saffron milk and garnish with the remaining coriander-mint leaves.
6️⃣ Serve hot with raita, salad, or chutney.
